Preparation Steps
- In a small saucepan, pour in your choice of milk and gradually heat it over medium heat until it’s steaming, about 5 minutes.
- Once the milk is hot, stir in the black tea leaves and remove from heat. Steep for 5 minutes, then strain.
- Return the strained milk tea to low heat, add the dark brown sugar, vanilla, and a pinch of salt. Stir for about 2 minutes until sugar dissolves.
- Remove the mixture from heat and cool for about 15 minutes. Stir in chia seeds until well combined.
- Pour the mixture into individual glasses or bowls and refrigerate for at least 3 hours until set.
- In a mixing bowl, beat the whipping cream until soft peaks form, then gently fold in additional brown sugar and salt.
- Once set, top the pudding with the salted foam. Serve chilled.
