Method
 

Preparation Steps
  1. In a small saucepan, pour in your choice of milk and gradually heat it over medium heat until it’s steaming, about 5 minutes.
  2. Once the milk is hot, stir in the black tea leaves and remove from heat. Steep for 5 minutes, then strain.
  3. Return the strained milk tea to low heat, add the dark brown sugar, vanilla, and a pinch of salt. Stir for about 2 minutes until sugar dissolves.
  4. Remove the mixture from heat and cool for about 15 minutes. Stir in chia seeds until well combined.
  5. Pour the mixture into individual glasses or bowls and refrigerate for at least 3 hours until set.
  6. In a mixing bowl, beat the whipping cream until soft peaks form, then gently fold in additional brown sugar and salt.
  7. Once set, top the pudding with the salted foam. Serve chilled.
