- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a large bowl, combine cauliflower florets, chopped onion, and minced garlic with a drizzle of extra-virgin olive oil, thyme, and cumin. Toss to coat and spread on the baking sheet to roast for 25-30 minutes.
- Once roasted, transfer the vegetables into a blender or food processor. Add kale and about three cups of water. Blend until smooth.
- Incorporate chopped avocado and blend again until ultra-smooth. Adjust consistency with more water if needed.
- Taste and adjust seasoning with salt. Serve warm, optionally drizzling extra-virgin olive oil over the top.
