Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a food processor, combine 1 can of rinsed pinto beans with a splash of chicken stock, blending until completely smooth.
- Heat a skillet over medium heat and add a drizzle of olive oil. Sauté chopped onions for about 3-4 minutes until translucent. Add minced garlic and cook for another minute.
- Incorporate smoked paprika, chili powder, cumin, and sea salt into the skillet with the sautéed onions and garlic. Cook for an additional 1-2 minutes.
- Stir in the remaining can of whole pinto beans along with the prepared bean puree. Fold in cheddar and Monterey Jack cheese.
- Transfer the mixture to an 8x8 glass baking dish, smoothing the top. Sprinkle remaining cheese on top.
- Bake in the preheated oven for 10 minutes until edges are bubbling and cheese is melted.
