  • 0.5 cups Cheddar Cheese can swap for pepper jack

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, combine 1 can of rinsed pinto beans with a splash of chicken stock, blending until completely smooth.
  3. Heat a skillet over medium heat and add a drizzle of olive oil. Sauté chopped onions for about 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  4. Incorporate smoked paprika, chili powder, cumin, and sea salt into the skillet with the sautéed onions and garlic. Cook for an additional 1-2 minutes.
  5. Stir in the remaining can of whole pinto beans along with the prepared bean puree. Fold in cheddar and Monterey Jack cheese.
  6. Transfer the mixture to an 8x8 glass baking dish, smoothing the top. Sprinkle remaining cheese on top.
  7. Bake in the preheated oven for 10 minutes until edges are bubbling and cheese is melted.
