Step-by-Step Instructions
  1. Melt 2 tablespoons of unsalted butter or heat olive oil in a large pot over medium heat. Add 1/2 cup of chopped yellow onion and 1 chopped poblano pepper. Sauté for 5–6 minutes until onion is translucent and poblano is tender and slightly browned.
  2. Stir in 2 cups of shredded chicken, 1 can of drained black beans, and 1/2 cup of frozen corn. Pour in 3 cups of chicken broth and add half of your seasoning blend. Increase heat to bring to a gentle simmer and cook uncovered for about 15 minutes.
  3. Reduce heat to low and stir in 1/2 cup of heavy cream and 1/2 cup of shredded cheese, mixing until cheese melts completely. Continue to cook on low heat until heated through.
  4. Simmer for an additional 15 minutes to deepen flavors, then add 2 teaspoons of fresh lime juice before serving. Garnish with fresh cilantro.
