  • 1.5 cups Cheddar Cheese Substitute with Monterey Jack or Pepper Jack
  • 1 medium Bell Pepper Any color
  • 1 medium Onion Yellow onion is preferred
  • 1 teaspoon Seasoned Salt Regular salt can be used if adjusted to taste
  • 1 can Cream of Chicken Soup A homemade version is healthier
  • 2 cups Chicken Broth Low sodium recommended
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 casserole dish.
  2. Bring chicken broth to a boil in a large pot, add angel hair spaghetti, and cook according to package instructions, typically 4-5 minutes.
  3. Sauté diced onion and bell pepper in oil over medium heat for 5-7 minutes until softened.
  4. In the prepared casserole dish, combine drained spaghetti, diced cooked chicken, sautéed vegetables, seasoned salt, cream of chicken soup, and 1.5 cups of cheddar cheese. Mix thoroughly.
  5. Gradually stir in reserved pasta broth until creamy consistency is achieved.
  6. Bake in the preheated oven for 45 minutes until bubbly and golden.
