  • 1 can Chickpeas canned or cooked from dry
  • 1 cup Brown Rice or substitute with white rice
  • 4 cups Spinach packed fresh or frozen
  • 1 can Artichoke Hearts canned or frozen
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 2 tablespoons Lemon Juice
  • 1/2 cup Cashew/Sunflower Seed Parmesan optional
  • 2 tablespoons Olive Oil or other cooking fat
  • 1 teaspoon Herbs (Fresh or Dried) thyme and rosemary work well

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté the diced onion for 5-7 minutes until translucent.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Stir in chickpeas, spinach, artichoke hearts, and cooked brown rice, mixing for 3-4 minutes.
  5. Season with lemon juice, herbs, salt, and pepper to taste.
  6. Grease a baking dish with olive oil and transfer the mixture into it.
  7. If desired, sprinkle cheese on top of the casserole.
  8. Bake for 20-25 minutes until edges are bubbly and top is golden brown.
  9. Let cool for 5-10 minutes before serving.
