  • 2 cloves Garlic minced
  • 1 inch Fresh Ginger minced or powdered ginger

Method
 

Step-by-Step Instructions for Coconut Curry Ramen
  1. Prepare the ingredients by cutting tofu, chopping shallots, garlic, ginger, mushrooms, bok choy, and purple cabbage.
  2. In a large pot, heat vegetable oil over medium heat. Add shallots, garlic, and ginger; sauté for 3-4 minutes.
  3. Add cubed tofu and shiitake mushrooms; cook for 5-7 minutes until mushrooms soften.
  4. Stir in green curry paste and cook for 2 minutes.
  5. Add coconut milk, vegetable broth, fish sauce, and lime juice; bring to a simmer for 5 minutes.
  6. Add ramen noodles and cook according to package instructions, about 3-5 minutes.
  7. Stir in bok choy and purple cabbage; cook for 1-2 minutes until greens are wilted.
