  • 2 ears grilled corn on the cob or substitute with canned or frozen corn
  • 1 small red onion diced
  • 0.25 cups cilantro chopped, or parsley if preferred

  • 0.25 teaspoons black pepper freshly ground
  • 0.5 teaspoons cumin adjust to taste

Equipment

  • Grill
  • medium-sized bowl
  • potato masher

Method

Step-by-Step Instructions
  1. Begin by cutting the ripe avocados in half lengthwise and carefully removing the pits. Use a spoon to scoop the creamy flesh into a medium-sized bowl. Mash until chunky.
  2. Squeeze the juice of a fresh lime over the avocado mash immediately after mashing. Gently fold the lime juice into the avocado.
  3. Preheat your grill to medium-high heat, approximately 400°F (200°C). Grill the corn for about 10-12 minutes until charred.
  4. Once cooled, slice the kernels off the grilled corn cobs and add to the bowl with the mashed avocado. Stir in the diced onion and cilantro.
  5. Sprinkle in sea salt, black pepper, and cumin, stirring gently to combine. Avoid over-mixing.
  6. Transfer to a serving bowl and enjoy immediately with tortilla chips or fresh veggies.
