Method
 

Cooking Directions
  1. In a large pot or Dutch oven, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-high heat. Once the butter has melted, add 1 chopped onion and sauté for 3-4 minutes until soft.
  2. Stir in 3 minced garlic cloves and 1 tablespoon of Italian seasoning, cooking for another minute. Add 1 cup of uncooked orzo pasta and toast for 2-3 minutes, stirring frequently.
  3. Pour in 4 cups of chicken broth and 1/4 cup of fresh lemon juice, along with 1/2 cup of heavy cream. Bring to a gentle boil and cook uncovered for about 10 minutes.
  4. Fold in 2 cups of shredded cooked chicken and remove from heat. Add 1/2 cup of Parmesan cheese and 3 cups of spinach. Stir until combined and cover for 3-5 minutes.
  5. Season with salt and pepper to taste, give it a gentle stir, and serve warm.
