Step‑by‑Step Instructions
  1. Rinse the wild rice under cold water in a fine-mesh strainer for about 1 minute to remove excess starch.
  2. In an Instant Pot, heat olive oil over the sauté setting. Add chopped mushrooms and cook for about 5 minutes until tender and golden.
  3. Toss in diced sweet potato and the rinsed wild rice, stirring to combine.
  4. Pour in coconut milk and vegetable broth, stir, and add Old Bay seasoning.
  5. Seal the Instant Pot lid and set to high pressure for 30 minutes.
  6. After cooking time is up, carefully release the pressure and stir in chopped kale.
