- Spray the inside of your slow cooker with non-stick cooking spray.
- Wash and cut the red potatoes into large chunks, about 1 to 2 inches in size.
- Drizzle olive oil over the cut potatoes and mix to coat evenly.
- Sprinkle in ranch seasoning, garlic powder, minced onion, and 3 tablespoons of Parmesan cheese. Toss thoroughly.
- Transfer seasoned potatoes to the slow cooker and spread evenly. Add salt and pepper to taste.
- Cover and cook on low for 5 to 6 hours or until tender, up to 7 hours for softer potatoes.
- Remove lid and sprinkle remaining ½ cup of Parmesan cheese on top. Let it melt before serving.
