  • 2 tablespoons Olive Oil or melted butter for richer flavor
For the Seasoning
  • 1 packet Ranch Seasoning Dip or homemade ranch for a healthier option
  • 1 teaspoon Garlic Powder or fresh minced garlic for more kick
  • 1 teaspoon Dried Minced Onion or fresh onion, be mindful of cooking time
For the Topping
  • 3 tablespoons Parmesan Cheese plus ½ cup for topping
  • to taste Salt ranch seasoning contains salt

Method
 

Step-by-Step Instructions
  1. Spray the inside of your slow cooker with non-stick cooking spray.
  2. Wash and cut the red potatoes into large chunks, about 1 to 2 inches in size.
  3. Drizzle olive oil over the cut potatoes and mix to coat evenly.
  4. Sprinkle in ranch seasoning, garlic powder, minced onion, and 3 tablespoons of Parmesan cheese. Toss thoroughly.
  5. Transfer seasoned potatoes to the slow cooker and spread evenly. Add salt and pepper to taste.
  6. Cover and cook on low for 5 to 6 hours or until tender, up to 7 hours for softer potatoes.
  7. Remove lid and sprinkle remaining ½ cup of Parmesan cheese on top. Let it melt before serving.
