Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.
- Melt 2 tablespoons of butter in a skillet over medium heat and sauté the diced onion for 4-5 minutes until translucent.
- Add chopped green bell pepper to the onion and sauté for an additional 2-3 minutes until tender.
- In a mixing bowl, combine cream cheese, sour cream, mozzarella, and provolone cheese until smooth.
- Fold the sautéed onion and green bell pepper into the cheese mixture, then add chopped roast beef, salt, and pepper.
- Spread the dip mixture evenly in the greased baking dish, reserving some beef and veggies for topping if desired.
- Cover with foil and bake for 15-18 minutes, then remove the foil and bake for an additional 2-3 minutes until golden.
- Let cool slightly, garnish with parsley and green onion, and serve warm.
