  • 8 oz Roast Beef Deli Meat Can substitute with plant-based deli meat for a vegan option.
  • 2 tbsp Butter For sautéing.
  • 1 medium Onion Diced.
  • 1 medium Green Bell Pepper Chopped.
  • 8 oz Cream Cheese At room temperature.
  • 1 cup Sour Cream
For the Cheesy Goodness
  • 1 cup Mozzarella Cheese Shredded.
  • 1 cup Provolone Cheese Shredded, can substitute with Swiss cheese.
Seasonings
  • 1 tsp Salt
  • 1 tsp Black Pepper
For Garnishing
  • 2 tbsp Fresh Parsley Chopped.
  • 2 tbsp Green Onion Sliced.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.
  2. Melt 2 tablespoons of butter in a skillet over medium heat and sauté the diced onion for 4-5 minutes until translucent.
  3. Add chopped green bell pepper to the onion and sauté for an additional 2-3 minutes until tender.
  4. In a mixing bowl, combine cream cheese, sour cream, mozzarella, and provolone cheese until smooth.
  5. Fold the sautéed onion and green bell pepper into the cheese mixture, then add chopped roast beef, salt, and pepper.
  6. Spread the dip mixture evenly in the greased baking dish, reserving some beef and veggies for topping if desired.
  7. Cover with foil and bake for 15-18 minutes, then remove the foil and bake for an additional 2-3 minutes until golden.
  8. Let cool slightly, garnish with parsley and green onion, and serve warm.
