Method
 

Preparation
  1. Rinse the quinoa in a fine mesh colander under cold running water for 2-3 minutes.
  2. In a medium-sized pot, combine rinsed quinoa, milk, maple syrup, cinnamon, and salt.
  3. Bring the mixture to a gentle boil over medium heat, which should take about 5 minutes.
  4. Reduce heat to low and cover the pot with a lid. Allow to simmer for 20-25 minutes, stirring every 5 minutes.
  5. Check the consistency; it should be thick yet creamy. Add more milk if necessary.
  6. Remove from heat and stir in the vanilla extract. Serve warm or let cool before refrigerating.
