- In a food processor or a medium bowl, combine your whole milk ricotta cheese, a pinch of salt, crushed chili flakes (if using), half of the honey, half of the fresh thyme, and the lemon zest.
- Secure the lid on the food processor or use a hand mixer, and blend the mixture on medium speed for about 1-2 minutes until smooth and fluffy.
- Using a spatula, carefully transfer the whipped ricotta mixture into a serving bowl.
- Once transferred, drizzle the remaining honey on top of the whipped ricotta.
- Sprinkle the rest of the fresh thyme over the top.
- Sprinkle crushed pistachios (or your choice of nuts) over the whipped ricotta.
- Finish off the dish by drizzling a touch of extra virgin olive oil over the top.
