Preparation Steps
- Pat the salmon fillets dry with paper towels and season generously with salt and black pepper on both sides. Allow the salmon to sit at room temperature for about 10 minutes.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Once shimmering, carefully add salmon, skin-side down. Sear for 4 minutes until golden brown and crispy. Flip and cook for an additional 4 minutes until opaque and flakes easily. Remove and set aside.
- Lower the heat to medium and add 2 tablespoons of unsalted butter. Once melted, stir in 2 minced garlic cloves and 1/4 cup of chopped sundried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in 1/2 cup of chicken stock, bring to a gentle simmer for 1 minute, then gradually stir in 1/2 cup of single cream, allowing it to boil for 1-2 minutes until thickened.
- Sprinkle in 1/4 teaspoon of cayenne pepper and 1 teaspoon of dried basil. Add 2 cups of baby spinach and cook for about 30 seconds until wilted.
- Carefully add the seared salmon back to the skillet, spooning sauce over fillets. Simmer for an additional minute.
- Serve warm over pasta, rice, or alongside a fresh salad.
