Method
 

Step-by-Step Instructions
  1. In a medium saucepan, heat 1 tablespoon of avocado or olive oil over medium heat. Add the onions and mushrooms. Sauté for 6-8 minutes until onions are translucent and mushrooms are browned.
  2. Stir in the minced garlic and thyme into the pan, cooking for an additional minute until fragrant.
  3. In a separate bowl, whisk together 1 tablespoon of arrowroot starch with a splash of vegetable broth until smooth.
  4. Pour in the remaining vegetable broth and dairy-free milk, adding drained white beans. Stir to combine and simmer for about 5 minutes.
  5. Mix in baby greens, stirring until they wilt down within about 1 minute.
  6. Add tamari or soy sauce and lemon juice, seasoning with salt and pepper to taste.
  7. Ladle the stew into bowls, garnishing with fresh basil. Serve warm.
