  • 4 cups Spinach Kale or other greens as alternatives.
  • 1 cup Mozzarella Cheese Shredded; swap for vegan cheese if required.
  • ½ cup Parmesan Cheese Freshly grated works best.
For Seasoning
  • 1 tablespoon Italian Seasoning Can substitute with a mix of oregano, basil, and thyme.

Step-by-Step Instructions
  1. In a large pot over medium heat, add your choice of sausage, breaking it into smaller pieces. Cook for about 5–7 minutes until browned.
  2. Once the sausage is browned, add one diced onion and 3 minced garlic cloves to the pot. Sauté for about 3–4 minutes until the onion is translucent.
  3. Pour in 4 cups of chicken broth and 1 cup of heavy cream, stirring gently to combine. Add the lasagna noodles and bring to a simmer for 6–8 minutes.
  4. When the noodles are almost tender, stir in 4 cups of fresh spinach and simmer for an additional 2–3 minutes.
  5. Remove the pot from heat and stir in 1 cup of shredded mozzarella and ½ cup of grated Parmesan until melted and creamy.
  6. Ladle the soup into bowls, garnish with extra cheese or herbs, and serve warm.
