- In a large pot over medium heat, add your choice of sausage, breaking it into smaller pieces. Cook for about 5–7 minutes until browned.
- Once the sausage is browned, add one diced onion and 3 minced garlic cloves to the pot. Sauté for about 3–4 minutes until the onion is translucent.
- Pour in 4 cups of chicken broth and 1 cup of heavy cream, stirring gently to combine. Add the lasagna noodles and bring to a simmer for 6–8 minutes.
- When the noodles are almost tender, stir in 4 cups of fresh spinach and simmer for an additional 2–3 minutes.
- Remove the pot from heat and stir in 1 cup of shredded mozzarella and ½ cup of grated Parmesan until melted and creamy.
- Ladle the soup into bowls, garnish with extra cheese or herbs, and serve warm.
