- In a blender, combine half a ripe avocado, sour cream, fresh lime juice, cilantro leaves, and salt. Blend everything until smooth, adjusting with a splash of water for a dipping consistency.
- In a non-stick skillet, heat 1 tablespoon of avocado oil over medium heat. Add the lean ground turkey along with half of your homemade taco seasoning and chopped onions. Cook for about 4-5 minutes, breaking up the turkey with a spatula until browned and fully cooked.
- Stir in the canned black beans, green chiles, along with the remaining taco seasoning and a splash of water. Allow the mixture to simmer uncovered for around 15 minutes, stirring occasionally.
- Preheat your oven to 425°F and lightly coat a baking sheet with avocado oil or cooking spray. Place the tortillas on the baking sheet, sprinkle cheese on one half, and spoon the turkey filling over the cheese.
- Bake for 1-2 minutes until the cheese melts. Carefully fold each tortilla in half, brush with more oil, and bake for an additional 10-12 minutes until golden-brown.
- Remove the baked tacos from the oven and let cool. Serve warm on a platter with creamy avocado sauce on the side.
