  • 1/2 cup Sour Cream Can be replaced with full-fat Greek yogurt.
  • 2 tablespoons Fresh Lime Juice Fresh lime juice is highly recommended.
  • 1/4 cup Cilantro Leaves Omit if you’re not a fan.
  • 1/2 teaspoon Kosher Salt Adjust based on salt type if substituting.
For the Taco Filling
  • 1 pound Lean Ground Turkey (85/15 or 93/7) Can substitute with ground beef or chicken if preferred.
  • 2 tablespoons Homemade Taco Seasoning Use store-bought for convenience.
  • 1 medium Chopped Onion (yellow or white) Green onions can be used as a substitute.
  • 1 can Canned Black Beans Drain but do not rinse for best flavor.
  • 1 small can Green Chiles Imparts mild heat.
For Assembly
  • 1 cup Shredded Monterey Jack Cheese Pepper Jack or Cheddar can also work.
  • 8 large Fajita-Sized Flour Tortillas Can substitute with corn tortillas.
  • 2 tablespoons Avocado Oil or Olive Oil Any neutral oil can work for cooking.

Method
 

Step-by-Step Instructions
  1. In a blender, combine half a ripe avocado, sour cream, fresh lime juice, cilantro leaves, and salt. Blend everything until smooth, adjusting with a splash of water for a dipping consistency.
  2. In a non-stick skillet, heat 1 tablespoon of avocado oil over medium heat. Add the lean ground turkey along with half of your homemade taco seasoning and chopped onions. Cook for about 4-5 minutes, breaking up the turkey with a spatula until browned and fully cooked.
  3. Stir in the canned black beans, green chiles, along with the remaining taco seasoning and a splash of water. Allow the mixture to simmer uncovered for around 15 minutes, stirring occasionally.
  4. Preheat your oven to 425°F and lightly coat a baking sheet with avocado oil or cooking spray. Place the tortillas on the baking sheet, sprinkle cheese on one half, and spoon the turkey filling over the cheese.
  5. Bake for 1-2 minutes until the cheese melts. Carefully fold each tortilla in half, brush with more oil, and bake for an additional 10-12 minutes until golden-brown.
  6. Remove the baked tacos from the oven and let cool. Serve warm on a platter with creamy avocado sauce on the side.
