  • 1 loaf French Baguette cut into ½ inch thick slices
  • 2 tablespoons Olive Oil good quality for better flavor
For the Shrimp Mixture
  • 1 pound Shrimp peeled, deveined, and minced
  • ¼ cup Onion finely chopped
  • ¼ cup Celery finely chopped
  • 2 cloves Garlic minced
  • 2 teaspoons Cajun Seasoning adjust based on spice preference
  • ¼ teaspoon Black Pepper fresh cracked
For the Cheese Blend
  • 4 ounces Cream Cheese cut into small cubes
  • ¼ cup Parmesan Cheese shaved or grated
  • ¼ cup Fontina Cheese or Gruyère or Havarti if unavailable
For Seasoning & Garnish
  • to taste Kosher Salt
  • to taste Pepper
  • to taste Crushed Red Pepper optional
  • 2 stalks Green Onion thinly sliced for garnish

Method
 

Directions
  1. Preheat your broiler on low and slice the French baguette into ½ inch thick pieces.
  2. Broil the baguette slices for 3-5 minutes, flipping to toast both sides until golden brown.
  3. In a skillet, heat olive oil over medium heat, then sauté minced shrimp, chopped onion, and celery for about 1 minute.
  4. Add minced garlic, Cajun seasoning, and black pepper; cook for an additional minute until fragrant.
  5. Lower heat and mix in cream cheese, Parmesan, and Fontina cheese until melted and creamy.
  6. Top each toasted baguette slice with the cheesy shrimp mixture.
  7. Bake at 400°F for about 10 minutes until bubbly and golden.
  8. Garnish with thinly sliced green onions and serve warm.

Notes

Store leftovers in an airtight container for up to 2 days. Freeze unbaked shrimp mixture for up to 3 months, but do not freeze assembled toasts with cream cheese.
