Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine melted butter, olive oil, and crushed dried rosemary.
- Pour 2 tablespoons of the rosemary-infused butter mixture into a 2-quart baking dish.
- Slice the sweet potatoes into thin, even rounds, about 1/8 inch thick.
- Layer sweet potato slices vertically in the baking dish, alternating with thinly sliced shallots.
- Brush the remaining rosemary butter mixture over the top of the layered potatoes.
- Sprinkle kosher salt and black pepper over the layers of sweet potatoes.
- Cover the baking dish tightly with foil and roast for about 1 hour.
- Remove the foil and increase the oven temperature to 450°F (232°C).
- Roast uncovered for an additional 10-15 minutes.
- Allow to cool slightly before serving hot.
