Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine melted butter, olive oil, and crushed dried rosemary.
  3. Pour 2 tablespoons of the rosemary-infused butter mixture into a 2-quart baking dish.
  4. Slice the sweet potatoes into thin, even rounds, about 1/8 inch thick.
  5. Layer sweet potato slices vertically in the baking dish, alternating with thinly sliced shallots.
  6. Brush the remaining rosemary butter mixture over the top of the layered potatoes.
  7. Sprinkle kosher salt and black pepper over the layers of sweet potatoes.
  8. Cover the baking dish tightly with foil and roast for about 1 hour.
  9. Remove the foil and increase the oven temperature to 450°F (232°C).
  10. Roast uncovered for an additional 10-15 minutes.
  11. Allow to cool slightly before serving hot.
