  4. Thinly slice the sweet potatoes and arrange them vertically in the prepared baking dish, alternating with slivers of shallot.
  5. Brush the arranged sweet potatoes and shallots with the remaining butter-oil mixture, then sprinkle with kosher salt and black pepper.
  6. Cover the baking dish with aluminum foil and roast for 1 hour.
  7. Increase the oven temperature to 450°F (232°C), remove the foil, and roast for an additional 10-15 minutes.
