  • 1 Egg Acts as a binder.
  • 1/2 cup Breadcrumbs Can be swapped for gluten-free breadcrumbs or almond flour.
  • 1/4 cup Grated Parmesan Cheese Optional; can be skipped for dairy-free.
  • 1/4 tsp Dried Oregano Italian seasoning can be substituted.
  • Salt and Pepper To taste.
  • 2 tbsp Olive Oil One for greasing and one for brushing.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a large mixing bowl, combine 2 cups of chopped fresh spinach, 1 cup of crumbled feta cheese, 1 finely chopped small onion, and 2 minced garlic cloves. Add in 1 beaten egg, ½ cup of breadcrumbs, ¼ cup of grated Parmesan (if using), and season with ¼ teaspoon of dried oregano, salt, and pepper. Mix everything thoroughly until well incorporated.
  3. Form the mixture into small patties, about 2-3 inches in diameter. Place the patties on the prepared baking sheet, leaving space between each one.
  4. Drizzle or lightly brush each patty with 1 tablespoon of olive oil.
  5. Bake for 20-25 minutes, flipping halfway through, until golden brown and fragrant.
  6. Remove from the oven and let cool for a few minutes. Serve warm with your favorite dipping sauce, like tzatziki.
