Step‑by‑Step Instructions for Vegetable Potato Fritters
  1. Prepare the red lentils by cooking them according to package instructions until tender, about 15-20 minutes. Drain any excess water and set aside to cool.
  2. Peel and grate the raw potatoes and carrot into a large mixing bowl. Aim for a fine to medium grate.
  3. Add the cooled lentils, minced garlic, and finely chopped red onion to the bowl. Sprinkle in the flour, smoked paprika, regular paprika, marjoram, salt, and pepper. Mix thoroughly.
  4. In a large non-stick skillet, heat oil over medium heat until shimmering, about 2-3 minutes.
  5. Scoop about 1 ½ heaped tablespoons of the mixture for each fritter and shape into patties. Carefully place in the hot skillet.
  6. Cook fritters for about 3-4 minutes on each side until golden brown and crispy. Carefully flip them when ready.
  7. Prepare the sriracha mayonnaise by combining vegan mayonnaise, tomato paste, garlic powder, smoked paprika, and sriracha sauce in a medium bowl. Mix until smooth.
