Preparation
  1. Preheat your oven to 400°F (200°C). Grate the yellow squash and sprinkle with salt, letting it drain in a colander for 10-15 minutes.
  2. Squeeze out excess moisture from the grated squash after the resting period.
  3. In a mixing bowl, combine the strained squash with the egg, grated cheese, breadcrumbs, onion, garlic powder, salt, and pepper. Mix thoroughly.
  4. Shape the mixture into tots and place them on a parchment-lined baking sheet, ensuring space between each.
  5. Bake the tots for about 25 minutes, flipping halfway through for even browning.
  6. While baking, prepare the yogurt dip by mixing yogurt, lemon juice, herbs, garlic powder, salt, and pepper in a bowl.
  7. Serve the warm tots with the yogurt dip.
