Cooking Steps
- Spray your crockpot with non-stick cooking spray.
- Layer the sliced small red onion and minced garlic at the bottom of the crockpot.
- Place the boneless, skinless chicken thighs on top of the onion and garlic mixture and season with salt, pepper, and Italian spice blend.
- Drizzle the olive oil and balsamic vinegar over the chicken, then pour in the canned diced tomatoes.
- Cover and cook on low for 6 to 8 hours or high for 4 hours.
- In the last 15 minutes, sprinkle mozzarella and Parmesan cheese on top, then add diced large tomato and fresh basil.
- Serve by scooping the chicken and sauce over pasta, risotto, or garlic bread.
