Ingredients
  

For the Chicken
  • 1 lb Boneless Skinless Chicken Thighs Can substitute with large chicken breasts if desired.
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 28 oz Canned Diced Tomatoes (with basil, oregano, and garlic) Fresh tomatoes can be used if canned isn't available.
  • 4 cloves Minced Garlic Fresh garlic is recommended for best flavor.
  • 1 small Red Onion Can use yellow onion as alternative.
  • 2 tbsp Extra Virgin Olive Oil Feel free to substitute with another cooking oil.
  • 2 tbsp Balsamic Vinegar Adjust according to taste preference.
  • 1 tbsp Italian Spice Blend Dried Italian herbs can be used as a substitute.
For the Topping
  • 1 cup Mozzarella Cheese Can substitute with provolone if desired.
  • 1/4 cup Parmesan Cheese Optional, but enhances the dish.
  • 1/4 cup Fresh Basil Dried basil can be used, fresh is preferred.
  • 1 large Tomato Dice and add before serving for freshness.

Method
 

Cooking Steps
  1. Spray your crockpot with non-stick cooking spray.
  2. Layer the sliced small red onion and minced garlic at the bottom of the crockpot.
  3. Place the boneless, skinless chicken thighs on top of the onion and garlic mixture and season with salt, pepper, and Italian spice blend.
  4. Drizzle the olive oil and balsamic vinegar over the chicken, then pour in the canned diced tomatoes.
  5. Cover and cook on low for 6 to 8 hours or high for 4 hours.
  6. In the last 15 minutes, sprinkle mozzarella and Parmesan cheese on top, then add diced large tomato and fresh basil.
  7. Serve by scooping the chicken and sauce over pasta, risotto, or garlic bread.
