Step-by-Step Instructions
  1. Cut the boneless, skinless chicken breasts into uniform bite-sized pieces, and place in the crockpot.
  2. Pour the coconut milk and chicken broth over the chicken pieces, ensuring they are well-coated.
  3. Add the curry powder, minced garlic, and ginger to the crockpot and stir to combine.
  4. Layer the chopped onion, red bell pepper, and sliced carrots on top of the chicken and sauce.
  5. Incorporate lime juice, fish sauce, and brown sugar into the crockpot, stir gently and add salt and pepper.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. About 30 minutes before cooking is complete, stir in the frozen peas.
  8. Once cooked, taste and adjust seasoning as needed, serve over cooked rice and garnish with fresh cilantro.
