  • 1 can Coconut milk
  • 1 cup Chicken broth
For the Seasoning
  • 2 tbsp Curry powder
  • 3 cloves Minced garlic fresh is best
  • 1 tbsp Minced ginger
  • 2 tbsp Brown sugar

For the Vegetables
  • 1 medium Onion, finely chopped
  • 1 medium Red bell pepper, sliced
  • 2 medium Carrots, sliced slice thin for even cooking
  • 1 cup Frozen peas add at the end
For Finishing Touches
  • 2 tbsp Lime juice
  • 1 tbsp Fish sauce or soy sauce for vegetarian options
  • 1/4 cup Fresh cilantro for garnish
  • 2 cups Cooked rice serving base

Method
 

Step‑by‑Step Instructions
  1. Cut the boneless, skinless chicken breasts into uniform bite-sized pieces and place in the bottom of your crockpot.
  2. Pour the coconut milk and chicken broth over the chicken, gently stir to combine and ensure chicken is submerged.
  3. Add the curry powder, minced garlic, and ginger to the crockpot and stir to distribute evenly.
  4. Layer the chopped onion, sliced red bell pepper, and sliced carrots on top of the chicken and sauce mixture.
  5. Incorporate the lime juice, fish sauce, and brown sugar into the crockpot, then season with salt and pepper.
  6. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  7. Stir in the frozen peas about 30 minutes before cooking is complete.
  8. Taste and adjust seasoning as needed, serve over cooked rice and garnish with fresh cilantro.
