  • 1/2 teaspoon Black Pepper Adjust according to your taste preference.
  • 1 teaspoon Salt Crucial for seasoning.
  • 1/4 teaspoon Red Pepper Flakes Omit for milder flavors if desired.
  • 2 tablespoons Olive Oil Avocado oil is a suitable substitute.
For Garnish
  • 1/4 cup Fresh Cilantro May substitute with parsley if you prefer.
  • 2 pieces Lime Wedges Perfect for garnish.

Equipment

  • Mixing Bowl
  • Baking sheet
  • Parchment paper
  • meat thermometer

Method

Step-by-Step Instructions
  1. In a mixing bowl, whisk together the fresh orange juice, lime juice, minced garlic, oregano, cumin, smoked paprika, salt, black pepper, and red pepper flakes until well combined.
  2. Coat the bone-in, skin-on chicken thighs in the marinade, ensuring each piece is thoroughly covered. Place the marinated thighs in a large resealable bag or a shallow dish, then cover and refrigerate for at least 2 hours.
  3. About 30 minutes before you're ready to cook, preheat your oven to 425°F (220°C) or prepare your grill for medium-high heat.
  4. Line a baking sheet with parchment paper, then arrange the marinated chicken thighs skin-side up on the sheet. Drizzle olive oil over the thighs.
  5. Roast the chicken thighs in the preheated oven for about 35-40 minutes or grill for 6-7 minutes on each side until the skin is golden brown.
  6. Remove the chicken thighs from the oven or grill and let them rest for 5-10 minutes.
  7. Garnish your Cuban Mojo Chicken Thighs with freshly chopped cilantro and lime wedges, and serve alongside rice, black beans, or a vibrant salad.
