Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a 9-inch round cake pan with parchment paper.
  2. Halve or quarter the carrots lengthwise and set aside.
  3. Melt unsalted butter and honey in a large sauté pan over medium-high heat. Add carrots, salt, pepper, and thyme, cover, and cook for 12-15 minutes.
  4. Uncover, increase heat, add balsamic vinegar, and cook for another 2 minutes until syrupy. Spread carrots evenly in the prepared pan.
  5. Roll out puff pastry into a 10-inch round and scatter crumbled goat cheese over the carrots. Place the pastry on top and tuck edges down; cut a vent in the center.
  6. Bake for 25-30 minutes until the pastry is golden brown. Cool for 10 minutes before flipping onto a serving plate.
  7. Garnish with fresh thyme and a sprinkle of flaky salt. Cut into wedges and serve.
