For the Apples

  • 1 tablespoon Cinnamon-Sugar Mixture Adjust to taste or add nutmeg for added warmth.

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9 baking pan.
  2. Beat the eggs on medium speed for about 3 minutes. Gradually add granulated sugar, brown sugar, vegetable oil, and vanilla extract, mixing until smooth.
  3. Fold in the matzo cake meal gently until a thick batter forms.
  4. Peel and slice the apples, then toss with half of the cinnamon-sugar mixture. Set the remainder aside.
  5. Spread half of the batter in the pan, layer half of the apples, then repeat with the remaining batter and apples.
  6. Sprinkle the reserved cinnamon-sugar mixture over the top layer of apples and bake for about 90 minutes, or until golden brown.
  7. Allow to cool in the pan for 15-20 minutes before slicing and serving.
