- Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9 baking pan.
- Beat the eggs on medium speed for about 3 minutes. Gradually add granulated sugar, brown sugar, vegetable oil, and vanilla extract, mixing until smooth.
- Fold in the matzo cake meal gently until a thick batter forms.
- Peel and slice the apples, then toss with half of the cinnamon-sugar mixture. Set the remainder aside.
- Spread half of the batter in the pan, layer half of the apples, then repeat with the remaining batter and apples.
- Sprinkle the reserved cinnamon-sugar mixture over the top layer of apples and bake for about 90 minutes, or until golden brown.
- Allow to cool in the pan for 15-20 minutes before slicing and serving.
