Cupcake Instructions
- Preheat your oven to 350°F (175°C) and prepare a cupcake tin with liners.
- Combine diced apples with lemon juice and 1 teaspoon of sugar, let sit for 10 minutes.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Beat softened butter and sugar together until light and fluffy, about 2-3 minutes.
- Add eggs one at a time and then mix in vanilla extract.
- Gradually mix in dry ingredients alternating with buttermilk until just combined.
- Gently fold in the apples.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes.

- Beat butter for frosting until creamy, then gradually add powdered sugar and vanilla, mixing in cream until fluffy.
