Marinating and Preparation
- In a medium bowl, combine lemongrass, shallots, fish sauce, oyster sauce, lime juice, maple syrup, ginger, garlic, sesame oil, chili paste, ground coriander, and Chinese five spice. Add pork tenderloin and coat evenly. Cover and refrigerate for 4-8 hours.
- In a small saucepan, combine rice vinegar, sugar, and water. Simmer until sugar dissolves, then pour over carrots and daikon radish in a heatproof jar. Cool and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C). Slice baguettes lengthwise and toast in the oven for 5-7 minutes until golden.
- Heat a grill or skillet over medium-high heat. Cook marinated pork for 1-2 minutes on each side until golden. Let rest before slicing.
- Spread mayonnaise on the baguette. Add cooked pork, pickled vegetables, cucumber slices, jalapeños, and cilantro.
- Slice the sandwich in half and serve immediately while warm.
