Ingredients
  

For the Pork Marinade
  • 1 pound Pork Tenderloin buttery and tender
  • 2 tablespoons Shallots finely chopped
  • 1 stalk Lemongrass finely chopped or use 1 tbsp lemongrass paste
  • 2 tablespoons Fish Sauce quality brands like Red Boat recommended
  • 1 tablespoon Oyster Sauce use high-quality for best results
  • 2 tablespoons Lime Juice fresh juice recommended
  • 1 tablespoon Maple Syrup pure maple syrup is ideal
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Ginger fresh preferred
  • 2 cloves Garlic minced or use garlic powder
  • 1 tablespoon Toasted Sesame Oil
  • 1 tablespoon Chili Paste Sambal Oelek or Sriracha recommended
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Chinese Five Spice
For the Pickled Vegetables
  • 1 cup Rice Vinegar unseasoned
  • 1 cup Carrots julienned
  • 1 cup Daikon Radish julienned
For Assembly
  • 1/2 cup Mayonnaise can mix with chili sauce
  • 4 pieces Baguettes Vietnamese recommended
  • 1 cup Cucumber sliced
  • 1 cup Jalapeños sliced
  • 1/4 cup Cilantro fresh

Method
 

Marinating and Preparation
  1. In a medium bowl, combine lemongrass, shallots, fish sauce, oyster sauce, lime juice, maple syrup, ginger, garlic, sesame oil, chili paste, ground coriander, and Chinese five spice. Add pork tenderloin and coat evenly. Cover and refrigerate for 4-8 hours.
  2. In a small saucepan, combine rice vinegar, sugar, and water. Simmer until sugar dissolves, then pour over carrots and daikon radish in a heatproof jar. Cool and refrigerate for at least 1 hour.
  3. Preheat the oven to 375°F (190°C). Slice baguettes lengthwise and toast in the oven for 5-7 minutes until golden.
  4. Heat a grill or skillet over medium-high heat. Cook marinated pork for 1-2 minutes on each side until golden. Let rest before slicing.
  5. Spread mayonnaise on the baguette. Add cooked pork, pickled vegetables, cucumber slices, jalapeños, and cilantro.
  6. Slice the sandwich in half and serve immediately while warm.
