Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with foil or a silpat mat.
  2. Place the wild salmon fillets skin-side down on the baking sheet and blot dry with a paper towel.
  3. Season the salmon generously with salt and black pepper.
  4. In a small bowl, whisk together olive oil, minced garlic, Dijon mustard, lemon juice, and thyme.
  5. Spoon half of the marinade over the salmon fillets and layer fresh lemon slices on top.
  6. Bake the salmon in the oven for 8 to 10 minutes.
  7. After baking, spoon the remaining marinade over the salmon and return to the oven for 3 to 5 minutes.
  8. Check for doneness using a meat thermometer, ensuring it reaches 145°F (63°C).
  9. Let the salmon rest for a couple of minutes before serving.
  10. Serve garnished with extra lemon slices and fresh thyme.
