Ingredients

For the Puff Pastry
  • 2 sheets Puff Pastry use ready-made for convenience or homemade for a touch of love.
For the Filling
  • 2 tablespoons Honey adds a touch of sweetness; maple syrup makes this vegan-friendly.
  • 100 grams Blue Cheese crumbled; gives a robust flavor; substitution with goat cheese or vegan blue cheese is possible.
  • 100 grams Parmesan Cheese grated; richness galore! Replace with nutritional yeast for a vegan option.
  • 50 grams Walnuts chopped; provide crunch; consider omitting or replacing with sunflower seeds for a nut-free treat.
  • 6-8 sprigs Fresh Thyme leaves only; aromatically elevates the dish; use dried thyme at half quantity if fresh isn't handy.
  • 1 tablespoon Milk for egg wash; choose non-dairy milk as a substitute for a vegan twist.
  • Sea Salt and Cracked Pepper to taste, enhances the flavors—adjust to your liking.

Equipment

  • Oven
  • Baking sheet
  • Rolling Pin
  • Parchment paper

Method

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F). For non-fan forced ovens, increase the temperature to 200°C (390°F).
  2. Unroll the two sheets of puff pastry onto a floured surface. Drizzle honey evenly across each sheet.
  3. Distribute the chopped walnuts, blue cheese, and grated Parmesan over the honey-drizzled pastry. Sprinkle fresh thyme leaves and season with sea salt and cracked pepper.
  4. Roll each pastry sheet tightly into a log and cut each roll in half lengthwise.
  5. Twist each strip of pastry into a coil shape and place on lined baking paper.
  6. Brush the tops of the pastry coils with milk and bake for 25-30 minutes until golden and puffed.
  7. Scatter extra thyme leaves over the top, allow to cool slightly, and serve warm.
