- Preheat your oven to 180°C (350°F). For non-fan forced ovens, increase the temperature to 200°C (390°F).
- Unroll the two sheets of puff pastry onto a floured surface. Drizzle honey evenly across each sheet.
- Distribute the chopped walnuts, blue cheese, and grated Parmesan over the honey-drizzled pastry. Sprinkle fresh thyme leaves and season with sea salt and cracked pepper.
- Roll each pastry sheet tightly into a log and cut each roll in half lengthwise.
- Twist each strip of pastry into a coil shape and place on lined baking paper.
- Brush the tops of the pastry coils with milk and bake for 25-30 minutes until golden and puffed.
- Scatter extra thyme leaves over the top, allow to cool slightly, and serve warm.
