- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Combine the all-purpose flour, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk together superfine sugar, Greek yogurt, egg, lemon zest, lemon juice, and vanilla extract.
- Gradually add the dry mixture to the wet mixture, stirring gently. Fold in fresh blueberries.
- Drop heaping tablespoons of dough onto baking sheets, spacing them 1 inch apart.
- Bake for approximately 12 minutes, until edges are golden brown.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
