For the Crostini Base
  • 1 loaf Fresh Baguette Consider ciabatta for a different texture.
  • 2 tablespoons Extra-Virgin Olive Oil Opt for high-quality oil to enhance the dish.
For the Toppings
  • 8 ounces Fresh Whole-Milk Mozzarella Creamy and soft, perfect for shaping ghost figures; alternatives are any fresh mozzarella.
  • 1/2 cup Pesto Feel free to swap in sun-dried tomato pesto.
  • 12 slices Campari Tomatoes Juicy, flavorful slices for a refreshing layer; grape tomatoes can be a good substitute.
  • 2 tablespoons Balsamic Glaze Adds sweetness and tang; thicker varieties work best for decorating your ghostly creations.

Equipment

  • Baking sheet
  • serrated bread knife
  • Cookie cutter

Method

Step‑by‑Step Instructions for Caprese Crostini Ghosts
  1. Preheat your oven to 400°F (200°C). Freeze your fresh whole-milk mozzarella for about 10 minutes to make it easier to cut into ghost shapes.
  2. Slice the fresh baguette diagonally into ½-inch thick pieces and set aside.
  3. Arrange baguette slices on a baking sheet, drizzle with extra-virgin olive oil, and bake for 8–9 minutes until golden and crisp. Let cool slightly.
  4. Slice the mozzarella into ¼-inch thick planks and use a ghost-shaped cookie cutter to cut out ghost figures.
  5. Spread about 1 teaspoon of pesto evenly on each toasted baguette slice.
  6. Top half of the pesto-covered crostini with a slice of Campari tomato. Place a mozzarella ghost on top and drizzle with balsamic glaze to create spooky faces.
  7. Layer another slice of tomato above the mozzarella for extra flavor, and drizzle with more balsamic glaze.
  8. Arrange your Caprese Crostini Ghosts on a serving platter and serve immediately while they are still crisp.
