Ingredients
  

For the Chicken
  • 2 pieces Boneless Skinless Chicken Breasts or Thighs Choose breasts for leaner meat or thighs for added flavor
  • 2 tablespoons Olive Oil To keep the chicken moist
  • 2 tablespoons Lime Juice For zesty marinade
  • 3 cloves Garlic (minced) For depth of flavor
  • 1 tablespoon Chipotle Chili Powder For smoky heat
  • 1 tablespoon Smoked Paprika To intensify smoky flavor
  • 1 teaspoon Cumin For earthy notes
  • to taste Salt & Black Pepper Essential seasonings
For the Bowl
  • 1 can Cooked Black Beans High in protein and fiber
  • 1 cup Corn Grilled, roasted, or canned
  • 1 medium Avocado (sliced) Add just before serving
  • 1/4 cup Fresh Cilantro (chopped) For garnish
For the Creamy Sauce
  • 1 cup Sour Cream or Greek Yogurt Greek yogurt adds tang
  • 2 tablespoons Minced Chipotle Peppers in Adobo Adjust for heat preference
  • 1 teaspoon Garlic Powder For enhancing flavor
  • 1 tablespoon Honey For sweetness

Method
 

Marinate Chicken
  1. In a large bowl, whisk together olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and pepper. Add the chicken and coat well. Cover and refrigerate for at least 30 minutes, ideally overnight.
Cook Chicken
  1. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, until the internal temperature reaches 165°F. Let rest before slicing.
Prepare Beans and Corn
  1. Warm black beans in a small saucepan with cumin and salt. Prepare corn as desired (canned, grilled, or roasted).
Make Creamy Sauce
  1. In a mixing bowl, combine sour cream (or Greek yogurt), lime juice, chipotle peppers, garlic powder, and honey. Whisk until smooth.
Assemble Bowl
  1. Layer black beans, corn, and sliced avocado in a bowl. Top with sliced chicken and drizzle with creamy sauce. Garnish with cilantro.
