  • 2 tablespoons Olive Oil Any neutral oil can be a substitute
  • 2 tablespoons Lime Juice Can substitute with lemon juice

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped scallions, shredded cheese, mayonnaise, salt, and pepper until just combined.
  2. Divide the mixture into equal portions and shape into patties about ½ inch thick, then chill in the refrigerator for 10-15 minutes.
  3. Heat a non-stick grill pan over medium-high heat, add olive oil, and cook the patties for 4-5 minutes on each side until fully cooked.
  4. While the chicken patties are cooking, cut fresh corn kernels and mix them in a bowl with diced avocado, cilantro, olive oil, lime juice, salt, and pepper.
  5. Remove cooked patties and assemble the burgers, topping each patty with the avocado corn salsa.
