Method
 

Chicken Wellington Instructions
  1. Season the chicken breasts with salt and black pepper. Heat olive oil in a skillet and sear the chicken for 2-3 minutes on each side until golden brown.
  2. Melt butter in the same skillet, add minced garlic and if using, add mushrooms, cooking until softened. Stir in flour and gradually whisk in milk until smooth.
  3. Roll out puff pastry and cut into rectangles. Place a spoonful of béchamel sauce, followed by cooled chicken and more sauce on each pastry piece. Fold pastry over and seal edges.
  4. Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Place assembled Wellingtons seam-side down, brush with egg, and bake for 25-30 minutes.
  5. Let the Chicken Wellington rest for 5 minutes, garnish with parsley and serve warm.
