Chicken Wellington Instructions
- Season the chicken breasts with salt and black pepper. Heat olive oil in a skillet and sear the chicken for 2-3 minutes on each side until golden brown.
- Melt butter in the same skillet, add minced garlic and if using, add mushrooms, cooking until softened. Stir in flour and gradually whisk in milk until smooth.
- Roll out puff pastry and cut into rectangles. Place a spoonful of béchamel sauce, followed by cooled chicken and more sauce on each pastry piece. Fold pastry over and seal edges.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Place assembled Wellingtons seam-side down, brush with egg, and bake for 25-30 minutes.
- Let the Chicken Wellington rest for 5 minutes, garnish with parsley and serve warm.
