  • 1.5 cups Birria Consommé Divided for topping and warming
  • 1.5 cups Shredded Oaxaca or Mozzarella Cheese Feel free to mix with Pepper Jack
  • 1.5 cups Leftover Beef Birria Ensure it's shredded
  • 0.5 medium Red or White Onion Thinly sliced
  • to taste Fresh Cilantro For garnish
  • as needed Lime Wedges For serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F (260°C) and place a pizza stone or baking sheet inside to heat for at least 45 minutes.
  2. Roll out the pizza dough on parchment paper to a thickness of about ¼ to ½ inch.
  3. Transfer the dough to a baking sheet lined with cornmeal, spread ⅓ cup of birria consommé, and layer with cheese and beef.
  4. Bake for 10-15 minutes until the cheese is bubbling and the crust is golden brown.
  5. Warm the remaining birria consommé in a saucepan over low heat.
  6. Garnish the pizza with onions and cilantro, serve with lime wedges and warm consommé.
