  • 2 tablespoons Lemon Juice Can substitute with lime or orange juice
  • 1 tablespoon Lemon Zest Orange zest is a great alternative
  • 1 teaspoon Vanilla Extract Can omit for a simpler finish
  • 1/2 cup Granulated Sugar Adjust to taste, can use up to 2/3 cup
  • 1/4 cup All-Purpose Flour Gluten-free flour can be used
  • 1 pinch Nutmeg Optional
  • 1 pinch Salt
Biscuit Topping
  • 2 1/2 cups All-Purpose Flour Gluten-free flour can also work
  • 1/3 cup Sugar Adjust depending on preference
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 pinch Salt
  • 1/2 cup Unsalted Butter Must be very cold
  • 1 large Egg Can substitute with a flax egg for vegan option
  • 1/2 cup Whole Milk Nut milk is a lighter alternative
  • 1/2 cup Heavy Cream
  • 2 tablespoons Sparkling Sugar Regular sugar can be used

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C).
  2. In a large skillet or baking dish, combine blueberries, lemon juice, lemon zest, vanilla extract, and granulated sugar. Gently toss to coat. Sprinkle flour and nutmeg over mixture and mix thoroughly.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Cut in cold unsalted butter until it resembles coarse crumbs.
  4. In another bowl, whisk together the egg, milk, and cream. Pour this wet mixture into the dry ingredients and mix gently until just combined.
  5. Turn the dough out onto a floured surface, knead gently, and press into a rectangle about ½ inch thick. Cut into 12 squares.
  6. Place the dough squares over the blueberry filling. Brush with egg wash and sprinkle sparkling sugar on top.
  7. Bake for 28–30 minutes until the biscuit topping is golden brown and flaky.
  8. Let cool for a few minutes, then serve warm with ice cream or whipped cream.
