Method
 

Preparation Instructions
  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add farfalle pasta and cook for 10-12 minutes until al dente. Drain and rinse under cold water.
  2. Prepare the Dressing: In a bowl, whisk mayonnaise, lime juice, garlic, chili powder, cumin, and paprika until creamy. Season with salt, pepper, and cayenne.
  3. Combine the Ingredients: In a mixing bowl, combine cooled pasta, fire-roasted corn, chopped cilantro, and sliced green onion. Toss gently.
  4. Mix in the Dressing: Pour prepared dressing over pasta mixture and toss until well coated.
  5. Add Cheese and Chill: Fold in crumbled cotija cheese and refrigerate for at least 30 minutes.
  6. Garnish and Serve: Garnish with extra cotija and cilantro. Serve chilled alongside grilled meats or as a standalone salad.
