Ingredients

For the Tzatziki
  • 1 cup Greek Yogurt Dairy-free yogurt for vegan option.
  • 2 cloves Garlic Adjust amount to taste.
  • 1 tablespoon Fresh Dill Mint can be used as a substitute.
  • 2 tablespoons Lemon Juice Fresh squeezed is ideal.

Method
 

Marinating and Cooking
  1. In a bowl, whisk together olive oil and spices to create the marinade. Pound chicken to ½ inch thickness, coat with marinade, and let sit for at least 30 minutes.
  2. Prepare tzatziki by combining Greek yogurt, minced garlic, diced cucumber, lemon juice, and chopped dill. Mix well and let rest for 15 minutes.
  3. Cook rice or quinoa as per package instructions, generally taking about 15-20 minutes.
  4. Preheat air fryer to 380°F (190°C). Cook marinated chicken for about 7 minutes, flip, and cook for another 3-4 minutes until internal temperature reaches 165°F (75°C).
  5. Assemble bowls by layering rice or quinoa, followed by fresh vegetables, sliced chicken, and drizzle with tzatziki, olive oil, and lemon juice.
