Marinating and Cooking
- In a bowl, whisk together olive oil and spices to create the marinade. Pound chicken to ½ inch thickness, coat with marinade, and let sit for at least 30 minutes.
- Prepare tzatziki by combining Greek yogurt, minced garlic, diced cucumber, lemon juice, and chopped dill. Mix well and let rest for 15 minutes.
- Cook rice or quinoa as per package instructions, generally taking about 15-20 minutes.
- Preheat air fryer to 380°F (190°C). Cook marinated chicken for about 7 minutes, flip, and cook for another 3-4 minutes until internal temperature reaches 165°F (75°C).
- Assemble bowls by layering rice or quinoa, followed by fresh vegetables, sliced chicken, and drizzle with tzatziki, olive oil, and lemon juice.
