- In a small bowl, whisk together ¼ cup of extra-virgin olive oil, ¼ cup of fresh lemon juice, 4 minced garlic cloves, 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, 2 tablespoons of Dijon mustard, and a sprinkle of kosher salt and freshly ground black pepper.
- Place 4 bone-in skin-on chicken thighs in a large mixing bowl or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is fully coated. Seal the bag or cover the bowl, and refrigerate for at least 1 hour, or up to 8 hours.
