- Preheat your oven to 350°F (175°C) and coat a 3-quart casserole dish with cooking spray.
- In a small mixing bowl, whisk together 3 eggs and ½ cup of milk or half & half until fully combined.
- In a larger mixing bowl, combine 12 ounces of cooked and crumbled breakfast sausage, 20 ounces of refrigerated hash browns, ¾ cup of cheddar cheese, ½ cup of sour cream, ½ teaspoon of onion powder, ½ teaspoon of fine sea salt, and ¼ teaspoon of ground white pepper. Mix until well incorporated.
- Pour the whisked egg and milk mixture into the bowl with the sausage and hash browns and stir gently but thoroughly.
- Spread the combined mixture evenly into your prepared casserole dish, smoothing the top with a spatula.
- Sprinkle the remaining ¼ cup of cheddar cheese over the top and bake uncovered for 30 minutes, until the cheese is melted and lightly browned.
