Preparation Steps
  1. Start by rinsing and drying the cherry tomatoes carefully. Quarter each tomato and place them in a large mixing bowl.
  2. Slice the red onion thinly and add it to the bowl with the quartered tomatoes.
  3. Smash and mince the garlic cloves, then sprinkle a pinch of sea salt over them to create a paste.
  4. Add the garlic paste, extra virgin olive oil, red wine vinegar, lemon juice, and black pepper to the mixing bowl. Toss everything gently.
  5. Allow the mixture to sit at room temperature for 1 to 2 hours to let the flavors meld.
