  • 4 cups Mashed Potatoes Russet or Yukon Gold recommended
  • 1/2 cup Sour Cream Greek yogurt can be substituted
  • 1/4 cup Butter Olive oil as dairy-free swap
For the Topping
  • 1 cup Shredded Cheddar Cheese Mixing in mozzarella is optional
  • to taste Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently.
  3. Spread the meat mixture evenly in the bottom of the baking dish and bake uncovered for 20-25 minutes.
  4. Warm pre-made mashed potatoes and stir in sour cream and butter until combined. Season to taste.
  5. Spread the mashed potatoes evenly over the cooked meatloaf layer.
  6. Sprinkle shredded cheddar cheese on top and return to the oven for an additional 10-15 minutes.
  7. Allow to rest for 5-10 minutes before serving, garnished with parsley.
