Preparation Steps
- Sterilize two pint jars and their lids in boiling water for about 10 minutes.
- Remove the jars and let them cool slightly before packing with cherries and thyme.
- In a saucepan, combine water, vinegar, sugar, peppercorns, fennel seeds, red pepper flakes, and bay leaf.
- Heat until sugar dissolves, then boil and simmer for 5 minutes.
- Pour the hot brine over the cherries, leaving 1 inch of headspace.
- Cool to room temperature for 30 minutes before transferring to the refrigerator.
- Let them pickle for at least 24 hours before enjoying.
