  • 1 teaspoon Baking Powder Ensure it's fresh.
  • 1/2 teaspoon Salt Important for flavor.
  • 1/2 cup Country Crock Plant Butter® with Avocado Oil Provides rich flavor.
  • 1 teaspoon Vanilla Extract Enhances taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper.
  2. In a large mixing bowl, combine chopped plums, granulated sugar, cornstarch, cardamom, and salt. Toss to coat the plums.
  3. In another bowl, blend flour, baking powder, remaining sugar, and salt. Mix in melted Country Crock Plant Butter and vanilla until a soft dough forms.
  4. Press half of the cookie dough into the bottom of the prepared baking pan.
  5. Spread the plum filling evenly over the cookie base.
  6. Crumble the remaining cookie dough over the plum filling.
  7. Bake for about 50 minutes until the top is golden brown and the filling bubbles.
  8. Allow to cool completely on a wire rack before slicing into squares.
