- Preheat your oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper.
- In a large mixing bowl, combine chopped plums, granulated sugar, cornstarch, cardamom, and salt. Toss to coat the plums.
- In another bowl, blend flour, baking powder, remaining sugar, and salt. Mix in melted Country Crock Plant Butter and vanilla until a soft dough forms.
- Press half of the cookie dough into the bottom of the prepared baking pan.
- Spread the plum filling evenly over the cookie base.
- Crumble the remaining cookie dough over the plum filling.
- Bake for about 50 minutes until the top is golden brown and the filling bubbles.
- Allow to cool completely on a wire rack before slicing into squares.
