Directions
- Prepare the cucumbers by peeling and slicing them into 1" rounds. Arrange on a platter and chill.
- In a mixing bowl, combine softened cream cheese, chopped dill, and horseradish. Optionally add heavy cream. Mix on medium speed until smooth.
- Spread about 1 teaspoon of the cream cheese mixture on each cucumber slice, then top with a piece of smoked salmon.
- Insert a toothpick or party fork into each bite to secure and serve immediately.

These bites are best served fresh. If preparing ahead, keep cucumber slices and cream cheese mixture separate until ready to assemble.
